Ingredients:
1 1/4 lb: ground beef,
1/2 lb: ground pork,
3/4 cup: instant oatmeal,
2: single eggs, beaten,
1/2 cup: milk,
1/2 cup: tomato juice,
1: onion, minced,
1 tablespoon: worcestershire sauce,
1 teaspoon: salt,
1/4 teaspoon: pepper,
Directions:
***There are a few rules to Diner Meatloaf that cannot be broken
because the essential "dinerhood" of the dish would be compromised.
Dont use lean meat or sirloin. Ground chuck, 20% fat will mean the
meatloaf will be juicy. Dont skimp on the oatmeal or if you choose,
bread crumbs. You need the pulpy texture to soak up the gravy. Dont
undercook, you are striving for a "grey". Preheat oven 350. Mix beef,
pork, oatmeal, and eggs. Blend in milk, tomato juice, onion,
Worcestershire, and seasonings. Pack firmly into a 9x5" loaf pan,
shaping a rounded top. Bake 1 1/2 hrs. Let stand 10 mins before
slicing. Drain off any excess juice at bottom of pan.
