Dads Mincemeat (xmas) Recipe

Ingredients:
2 lb: lean beef round stew meat,
8 cup: water,
1 lb: suet, cut up,
12 medium: cooking apples, pared and,
1: cored,
3 lb: seedless raisins,
3 cup: dried currents,
1 cup: candied orange peel, finely,
1: diced,
4 teaspoon: salt,
4 teaspoon: cinnamon,
1 teaspoon: powdered allspice,
1 teaspoon: ground cloves,
2 cup: sugar,
2 cup: brown sugar,
1 cup: molasses,
8 teaspoon: lemon juice,
2 cup: apple cider,

Directions:
Boil beef in water. Cover and simmer 2 hours. Remove meat and reserve 4
cups of stock. Put meat, suet, apples through a food chopped. Put in
large, 7-8 quart, pan. Add remaining ingredients, except lemon juice and
cider. Add reserved stock and simmer uncovered 1 hour, stirring
occasionally. Add juices during last 5 minutes of cooking. Pack while hot
into sterilized jars. 1 quart will make a 9-inch pie (3 cups) with 1 cup
left over for cookies or tarts.
