Easy Cream Of Celery Soup Recipe

Ingredients:
1 1/2 cup: chicken broth,
1/2 cup: chopped onion,
1 1/2 cup: chopped celery,
2 tablespoon: snipped parsley,
1/2 teaspoon: dried basil (optional),
2 tablespoon: butter,
2 tablespoon: flour,
1 dash: salt to taste,
1 dash: pepper to taste,
1 cup: milk,

Directions:
In a saucepan, combine broth, chopped onion and celery. Bring mixture
to a boil. Reduce heat, cover and simmer for 15 minutes.

Place half of the mixture in a blender or food processor. Cover and
blend for 30 seconds or until smooth. Pour into a bowl. Repeat with
remaining celery mixture. Set aside.

In the same saucepan melt the butter stir in the flour, salt and
pepper. Add the milk all at once. Cook and stir until mixture is
thickened and bubbly.

Stir in the blended celery mixture. Cook and stir until soup is
heated through.

Check for seasoning. Serve Hot
