Quince Paste -dulce De Membrillo- Recipe

Ingredients:
450 gram: sugar,
250 milliliter: water,
Directions:
1,6 kg yellow quinces
Rub the quinces clean and place in a saucepan of cold water. Heat until the
skins are about to split, then remove them from the water, skin them and
discard the pips and membranes.
Dissolve the sugar in the water and heat gently to make a syrup. Add the
fruit to the syrup, making sure that there is enough to cover the fruit.
Leave it to cool.
