Mache & Beet Salad Recipe

Ingredients:
2 cup: Mache,
4: White or golden beets, cooked, peeled & chopped
1 tsp: Chopped lovage or parsley,
2 tbsp: Balsamic vinegar,
5 tbsp: Olive oil,
2: Eggs, hard-boiled
1/2 cup: Home made croutons,
Directions:
In a salad bowl combine lovage or parsley, vinegar and oil. Add
beets, toss to coat and marinate for 1 hour. Add mache, toss, garnish
with eggs and croutons.
