Black Bean & Rice Salad Recipe

Ingredients:
2 cup: Cooked or canned black beans, (rinse & drained canned)
2 cup: Cooked rice,
1 1/2 cup: Fresh cilantro,
1/4 cup: Lime juice,
3/4 cup: Oil,
1/2 cup: Chopped onion,
2: Garlic cloves, crushed
Salt,
Freshly ground black pepper,
Directions:
Mix the beans, rice, and cilantro together in a bowl. Place the lime
juice in a small bowl and whisk in the oil. Add the onion and garlic
and toss with the rice and beans. Add salt and pepper to taste.
