Monastery Herbal Sausage Recipe

Ingredients:
400 gram: Lean pork,
400 gram: Lean beef,
200 gram: Green pork back fat or fatty,
Pork belly without skin,
20 gram: Salt,
2: Level tsps finely ground,
White pepper,
1 tsp: Thyme,
1 tsp: Marjoram,
5 Pieces: pimento,
1 Piece: finely ground,
Cinnamon,

Directions:
Mince pork, beef and fat through 8mm disc. Mix herbs and spices and
sprinkle over meat mass and mix all together by hand for 5-10 mins.
Fit funnel to mixer and fill pork casings. Twist into length of
choice.
