Ingredients:
BASE
2 cup: All purpose flour,
1 tbsp: Baking powder,
4 tbsp: Granulated sugar,
2 tbsp: Shortening,
1 cup: Cream,
1: Egg,
3 cup: Any fresh or frozen fruits, such as cherries, halved plums, apple slices, apricots or rhubarb
CRUMB TOPPING
3/4 cup: Granulated sugar,
3/4 cup: All purpose flour,
1/2 t: Baking powder,
2 tbsp: Butter,
Cream,
Directions:
Sift together flour, baking powder and sugar; add shortening, mixing
well with fingers until fine crumbs form. Add the cream and the egg,
mixing well. Pat dough out on a greased cookie sheet, pushing up
sides. Top with a layer of desired fruit. To prepare crumb topping,
mix together sugar, flour and baking powder. Rub in butter and enough
cream to make coarse crumbs. Note: If using rhubarb, gooseberries,
or other similarly tart fruit, add extra sugar as desired. Speinkle
crumbs over fruit and bake in 375 F8F oven for 25 - 30 minutes. Cut
in squares and serve.
