Ingredients:
4 medium: Carrots, shredded
1 tbsp: Chopped fresh parsley,
1 tbsp: Basil,
1 tbsp: Scallions,
3 tbsp: Lemon juice,
2 tbsp: Safflower oil,
Salt & pepper,

Directions:
Combine all ingredients in a mixing bowl, toss & serve.
