Orange Sorbet Cups Recipe

Ingredients:
4 ounce: Cube Sugar,
4: Oranges,
1 pint: Water,
Grated Rind of 1 orange,
Mint Sprigs to decorate,
Directions:
Place the cube sugar in a pan with 1 pint of water and cook over a
moderate heat until sugar has dissolved. Bring the liquid to the boil
and as soon as it starts to bubble, boil for 5 minutes. Remove the
pan from the heat and allow to cool.
Meanwhile, to make the cups slice the top off each orange and scoop
out the flesh. Squeeze out the juices and strain. Making liquid up to
half a pint with a little water if necessary.
Add the grated rind to the orange juice and combine with the cooled
sugar syrup. Carefully pour the mixture into the orange cups, cover
and place in the freezer for approximately 1 to 2 hours until mushy.
Serve decorated with the sprigs of mint
