Chicken Rice Salad Recipe

Ingredients:
1 package: Uncle Bens Fast Cooking Rice Pilaf,
2 quart: Water,
2 quart: Cooked chicken, diced
1 quart: Mayonnaise,
1/4 cup: Lemon juice,
2 cup: Green peppers, chopped
2 cup: Tomatoes, fresh, chopped

Directions:
1. Combine rice, contents of seasoning packet and water in cooking
pan. 2. Bring to a vigours boil. Reduce heat, cover and simmer until
water is
absorbed, about 5 minutes. 3. Cool slightly. 4. Add diced chicken.
5. Combine mayonnaise and lemon juice. Stir into rice. 6. Cover and
chill. 7. Fold in green peppers and remaining ingredients just prior
to serving. Measurements and timing are designed only for Uncle Bens
