Pumpernickel Recipe

Ingredients:

1 cup: Corn Meal, (Mixed Fine & Course)
1 cup: Rye,
1 cup: Whole Wheat,
3 tsp: Bran,
1 1/2 tsp: Salt,
1 1/8 cup: Water,
3 tbsp: Molasses, honey; or sugar
1 1/2 tbsp: Dry milk, or dry buttermilk
1 1/2 tsp: Brotgewurtz, (a German mixture of anis; fennel; and corriander - either whole seed or ground)
1 1/2 tsp: Yeast,
1 1/2 tbsp: Olive Oil,
1 tbsp: Instant Coffee,
1 tbsp: Cocoa,
Directions:
This gives a dark bread; fairly moist, with lots of texture.
