Quick Potato Salad For One Recipe

Ingredients:
1/4 cup: Mayonnaise,
1 tbsp: Drained chopped roasted red pepper or pimiento, drained, optional
1 tbsp: Finely chopped onion,
1 1/2 tsp: Cider vinegar,
1 tsp: Dijon-style mustard,
1/4 tsp: Salt Dash pepper,
1: Fresh Idaho potato, baked, cubed
Directions:
In small bowl combine first seven ingredients; mix well. Add
potatoes; toss to coat well. Cover; refrigerate. Makes 1 serving.
