Curried Eggs Recipe

Ingredients:
6: Eggs, hard boiled
4 tsp: Butter,
1: Apple, peeled, cored & fine
1: Onion, minced
2 tsp: Curry powder,
2 tsp: Flour,
1 1/2 cup: Milk,
2 tsp: Parsley, minced

Directions:
Preheat oven to 350F. Slice eggs & place in double layer,
slightly overlapping in greased baking dish. Set aside. SAUCE:Melt
butter in pan over low heat. Add apple & onion. Cook, stirring till
onion is limp & apple reduced to a puree (10 min). Stir in curry
powder, then flour & salt. Stir till smooth. Slowly add milk,
stirring as added. Cook, stirring till sauce is thick & smooth. Pour
sauce over eggs & place in oven till bubbly hot. Top with parsley.
Serve with chutney.
