Scott Wellivers Washington Apple Cake Recipe

Ingredients:
2 cup: Sugar,
3 cup: Flour,
1 tsp: Soda,
1 tsp: Salt,
1 tsp: Cinnamon,
pn Nutmeg,
1 1/2 cup: Oil,
4: Eggs,
1 tsp: Vanilla,
3 cup: Apples, red, chopped (do not peel)
1 cup: Walnuts, chopped
1 pint: Cream, whipping, whipped
Sugar, powdered, to taste (for sweetening cream)
Directions:
In large bowl of mixer, sift together dry ingredients. With mixer on
slowest speed, add oil. At medium speed, add eggs one at a time,
beating well after each addition. Add vanilla. Stir in the apples and
walnuts. Turn batter into a greased tub pan. Bake at 350
F for 1
hour or until toothpick comes out clean. Cool 10 minutes in pan and
turn out on plate. Serve with sweetened whipped cream.
