Ingredients:
1 tbsp: Black peppercorns, heaped
2 tsp: Whole cloves,
2 tsp: Nutmeg, freshly grated
1 tsp: Ground ginger,

Directions:
Mix, then grind in a spice grinder or coffee mill, then re-mix. Store
in an airtight container, keep in a cool place away from light.
Muchly used in French charcuterie and with slowly cooked meat and
poultry dishes.
