Spicy Noodle Salad Recipe

Ingredients:
12 ounce: Spaghetti,
2 tbsp: Sesame oil,
1 1/2 cup: Carrots, grated
1 1/2 cup: Bean sprouts,
4: Green onions, chopped
1 tbsp: Orange rind, grated
1/4 cup: Orange juice,
1/4 cup: Tahini [optl],
3 tbsp: Soy sauce,
1 tsp: Granulated sugar,
1 tsp: Hot pepper sauce,
1/2 cup: Peanuts, chopped
1/4 cup: Fresh coriander, chopped

Directions:
In large pot of boiling salted water, cook spaghetti for 8-10 minutes
or until tender but firm; drain and rinse under cold water. Drain
well and transfer to bowl; toss with sesame oil. Add carrots, bean
sprouts, onions and orange rind.

Combine orange juice, tahini, soy sauce, sugar and hot pepper sauce;
toss with spaghetti mixture. Sprinkle with peanuts and coriander.

Makes 4 servings for $3.90CDN [Sep 94]

Per serving: about 535 calories, 18 g protein, 17 g fat, 79 g
carbohydrate good source iron, very high source fibre.
