1 1/2 tbsp: Flour,
1 cup: Milk, skim
1/4 cup: Chicken broth,
3/4 tsp: Salt, divided

1/4 tsp: Nutmeg,
2 cup: Ricotta cheese, part-skim
10 ounce: Spinach, frgn, chpd, drained
2 ounce: Parmesan Cheese, grated
1/2 tsp: Garlic pwdr,
8 each: Manicotti shells*,
2 ounce: Mozzarella cheese, shredded

Directions:
Cook manicotti shells according to directions and drain. In small
saucepan heat margarine over medium heat until bubbly and hot; add
flour and cook, stirring constantly for 1 minute. Reduce heat to low;
gradually stir in milk and broth. Continue to stir and cook until
mixture is smooth; add 1/4 t. salt and dash each of pepper and nutmeg
and let simmer, stirring occasionally, until mixture is thickened,
10-15 minutes. While mixture is simmering, in medium bowl c----------

stuffed shells in dish; top with remaining sauce and sprinkle with
mozzarella. Cover dish and bake until manicotti are heated through,
20-25 minutes. Turn oven control to broil, uncover pan, and broil
until cheese is melted and lightly browned, 3-5 minutes. 2
