Yentl Lentil Salad Recipe

Ingredients:
2 cup: Cooked lentils,
1 1/2 cup: Peeled, seeded, chopped
Tomatoes,
1 cup: Chopped parsley,
1/2 cup: Diced celery,
1/2 cup: Chopped green pepper,
1/2 cup: Chopped red onion,
1/4 cup: Chopped mint,
1/4 cup: Lemon juice,
1 tbsp: Olive oil,
1 tsp: Salt,
1/4 tsp: Pepper,
1/8 tsp: Each garlic powder & cumin,
Lettuce leaves,
Mint leaves, optional
1: In large mixing bowl, combine all ingredients, except lettuce and
mint leaves, mixing thoroughly. Chill.
2: Serve on a bed of lettuce.,
3: Garnish with mint leaves if desired.,
