Swedish Rye (natural) Recipe

Yield: 3 Loaves

Ingredients:
3 cup: Warm water,
2 T: Yeast,
1/2 cup: Honey,
1/2 cup: Molasses,
1 1/2 tsp: Anise,
2 tsp: Grated orange peel,
6 cup: Whole wheat flour, approx.
1/2 cup: Oil,
1 T: Salt,
4 cup: Rye flour,
Sprinkle of corn meal,

Directions:
Combine water, yeast, h;oney and molasses. Let sit for about 5
minutes until the yeast rises to the surface. Add anise, orange
peel, 3 c. whole wheat flour. Stir thoroughly. Let rise 15 to 30
minutes. Stir down. Add the oil, salt, rye flour, and enough whole
wheat flour to make a fairly stiff dough. Knead thorughly. Let rise
until double in bulk, usually about 1 hour. Punch down. Shape into
3 round loaves. Placeon cookie sheet sprinkled with corn meal. Cut a
slit in the top of each. Let rise until amost double, abt. 1/2 hr.
Bake at 375 abt. 40 minutes or until done. Cool on a rack.
