Crystal Tomatoes Recipe

5 lbs: Green tomatoes,
3 tbsp: Slaked lime, (calcium hydrox-

2 quart: Plus 1 c water,
3 1/2 cup: Sugar,
3: 2" cinnamon sticks,
1 tsp: Nutmeg,
1 tbsp: Pieces of whole dried ginger,
1 tsp: Salt,
4 cup: Vinegar,
Cut the tomatoes into 1/4" slices.,

Drain and rinse the tomatoes in several changes of cold water;
drain.
Place the sugar, the spices tied loosely in cheesecloth, the
salt, vinegar and 1 cup of water in a 6-quart kettle. Boil for 5
minutes.
Add the tomatoes and boil until the syrup is thick and the
tomatoes are clear. Pack at once into hot sterilized jars, sealing
immediately.
