Sweet Gherkins Recipe

Ingredients:
6 1/2 lbs: 1 1/2-3" long immature cukes,
6 cup: Apple cider vinegar,
1/2 tsp: Tumeric,
2 tsp: Celery seed,
2 tsp: Homemade pickling spice,
8 Sticks: cinnamon, broken into
1: " pieces,
1/2 tsp: Fennel seeds,
2 cup: Honey,
Directions:
Wash cucumbers, and place in a large container. Cover with cold
water and ice cubes. Refrigerate 5 hours, drain.
Place cucumbers in large enamel or stainless steel pot. Add vinegar,
tumeric, and a cheesecloth bag containing celery seeds, pickling
spice, cinnamon and fennel seeds. Bring to a boil. Add honey. Bring
to a boil again.
Pack cucumbers into hot scalded pint jars. Cover with boiling liquid,
leaving 1/4" headspace. Seal and process 10 minutes in a boiling
water bath according to most recent Ball Blue Book instructions for
processing. Makes 10-11 pints of pickles.
