Avocado Citrus Salad Recipe

Ingredients:
1/2 cup: Fresh orange juice,
2 tbsp: Olive oil,
1 tsp: Fresh taragon minced*,
2: Pink grapefruit,
1: Fresh lemon, quartered
1/4 cup: Champagne vinegar,
1 Clove: garlic, minced
2 Heads: Bibb lettuce,
2: Ripe avocados,

Directions:
1. Combine orange juice, vinegar, olive oil, garlic and taragon*(1/4
teaspoon dried) in a covered container.Shake well and set aside until ready
to serve salad. 2. Separate Bibb lettuce leaves. Gently wash and pat dry
with a towel. Peel grapefruit and cut in half end-to-end. Slice into six
half-moons, removing seeds. Cut avocados in half lengthwise and remove
pits. Slice intop 6 crescents and remove peels. Spritz with fresh lemon to
prevent browning. 3. To assemble salad, divide lettuce between 6 plates.
Arrange four slices each of grapefruit and avocado on top of lettuce.
Drizzle with dressing and serve. Prep Time: 30 minutes.
