Ingredients:
1: 6 OZ BEE FILET,
1 large: ARTICHOKE,
2 ounce: CARROT,
2 ounce: BEETS,
3 ounce: BEEF STOCK,
1/2 ounce: GLACE DE VIANDE,
1/4 tsp: FRESH ROSEMARY,
1/4 tsp: BLACK PEPPER,
1: TOMATO CUT INTO 1/6S,
1/4 tsp: HORSERADISH,
2 ounce: BURBON,
6 ounce: CONSOMME,

Directions:
quickly sear a beef filet in a hot dry skillet add burbon rosemary
flavored consomme.Braised untill desired doness.Poach artichoke bottom in
salted water.Place ot artichoke in center of plate,place the filet in
center of artichoke.prepare a juice from some of the braising liquid and
glace de viande.Season and strain on to the plate.top the filet w/a relish
made from tomato(1/6 diced fine)lemon (juice) and horseradish.
