Garlicky Broiled Chicken Recipe

Ingredients:

BROILED CHICKEN BREASTS ARE

1/3 cup: Lemon juice,
2 T: Olive oil,
1/3 cup: Dry white wine,
6 centiliter: Garlic, minced or pressed
2: Bay leaves, crumbled
2: Chicken breasts, skinned, boned & split(1 lb of meat)
2 large: Red bell peppers, seeded and cut into 1 1/2 inch squares
3/4 lbs: Medium-size mushrooms, halved

Directions:
In a shallow bowl, stir together lemon juice, oil, wine, garlic, and bay
leaves. Rinse and drain chicken; add to marinade and turn to coat. Cover
and refrigerate for at least 2 hours or up to 1 day, turning chicken
occasionally.

Lift chicken from marinade; reserve marinade. Place chicken on a rack in
broiler pan. Broil 4 inches below heat for 15 minutes, basting with
marinade and turning as needed to cook evenly. Arrange bell peppers and
mushrooms alongside chicken, baste lightly, and continue to broil until
chicken is no longer pink in thickest part; cut to test (about 5 more
minutes).

Per serving: 213 calories, (30% fat), 7 g total
fat, 1 g saturated fat, 66 mg cholesterol, 83 mg sodium.
