Lowfat Quinoa And Beans Recipe

Ingredients:
1 cup: Uncooked quinoa,
2 cup: Chicken broth, de-fatted
1: Red bell pepper, thin sliced
1 Gr.: bell pepper, thin sliced
1 medium: Onion, chopped coarsely
3: Garlic cloves, minced
1/2: of small bunch of fresh cilantro, coriander
1 can: Cowpeas, drained and rinsed use Blackeyes or any other bean if you cannot find cowpeas)
Freshly gr. pepper to taste,
2 T: Olive oil,

Directions:
Cook the quinoa according to directions except use chicken broth instead
of water (vegetarians can use vegetable broth). Set aside. In the oil,
saute the peppers, onions and garlic till softened, toss in fresh
cilantro, rinsed cooked beans and cooked quinoa. Check for salt. Serve
hot or cold, main dish, side dish, salad or anything.
