No-fat Banana Muffins Recipe

Ingredients:

No-stick cooking spray,
1 1/2 cup: Flour,
1/4 cup: Sugar,
2 t: Baking powder, (look for "lite")
1/2 t: Baking soda,
1/2 t: -salt, optional
1/2 t: Cinnamon,
2: Egg whites,
2 large: Ripe bananas, mashed
2/3 cup: Skim milk,
1/3 cup: Corn Syrup, (light or dark)
Directions:
Spray 12 (2 1/2-inch) muffin cups with cooking spray. In medium bowl
combine flour, sugar, baking powder, baking soda, salt and cinnamon. In
large bowl, using a fork or wire whisk, beat egg whites lightly. Stir in
mashed bananas, milk and corn syrup. Add flour mixture; stir until well
blended. Spoon into prepared muffin cups. Bake in 400 deg. oven 22 to 25
minutes or until firm to touch. Cool in pan 5 minutes. Remove: cool on wire
rack. Makes 12 muffins. Per serving: 0g fat, 0 mg cholesterol, 130
calories, 200 mg sodium (less vif you omit salt)
