22179 Tomato Flan Tex-mex Style Recipe

Ingredients:
2 large: Tomatoes, sliced 1/2" thick
1 cup: Half & Half,
1/4 cup: Onion, minced
-Salt and pepper, to taste
1: , (4 oz.) can green chilies,
1 cup: Sour cream,
-chopped,
1/2 cup: Cheddar cheese, shredded
3: Eggs,
1/4 cup: Scallions, chopped
Directions:
Layer tomatoes in buttered 9" pie plate. Sprinkle with onion and
chilies. Combine eggs, Half & Half, salt and pepper and pour over
tomatoes. Bake at 450 degrees for 10 minutes, lower oven temperature
to 350 and bake an additional 30 minutes. Top with sour cream,
cheddar cheese and scallions. Makes 6 servings.
