Squash Pudding Recipe

Ingredients:

WALDINE VAN GEFFEN VGHC42A
1: Onion, chopped
1: Green pepper, chop
4 tbsp: Raisins,
3 cup: Cornmeal,
2 tbsp: Water,
Salt and pepper,
1: Acorn squash, cook, puree
10: Capers,
1 tsp: Thyme,
3: Olives, chopped

Directions:
Saute onions and peppers in 1tb oil. Add pureed squash, capers, thyme and
olives. Mix. Combine cornmeal, water, salt and pepper. On piece of foil
place cornmeal mixture in a roll. Make a trough lengthwise down the center.
Fill with cooled squash mixture. Use foil to roll up. Place foiled-wrapped
roll in 350~ oven and bake for 30 minutes.
