Ingredients:
-Tex-Mex,

REBER, RUTH
1 can: Corn,
1 can: Ranch beans,
1 can: Navy beans,
1 can: Hominy,
1 can: Tomato sauce,
1/2 can: Tomatoes with green chilis,
1 can: Water,
1/2 large: Onions, diced
1 package: Taco seasoning mix,
1 can: Tomatoes,

OPTIONAL TOPPINGS
Cheese, shredded
Sour cream,
Corn tortillas,

Directions:
Dice onion. Mix all ingredients in a large crockpot and heat for 30 min on
high and turn down to low for 2-3 hours.

If cooking on stove, heat until hot and flavors are blended.

Serve with Jalapeno corn bread and a salad.

Sylvias comments: What a great quick soup! I sauteed the onions in a
little oil first, since I dont like raw onions in food, then stirred in
the taco seasoning and then the rest of the ingredients. I didnt know
whether to drain the stuff or not, so I drained and rinsed everything
except the tomatoes. The original recipe didnt have toppings, but it just
seemed to need something. Sour cream or shredded cheddar set it off very
nicely, and I think corn tortillas would as well but I didnt have them to
try.

Nutritional Information per serving, without toppings: 267 calories, 12 gm
protein, 45 gm carbohydrate, 4.7 gm fat (1.9 gm sat, 2.3 gm mono, 0.5 gm
poly), 15% Calories from fat, 7.5 mg chol, 1378 mg sodium, 1.2 g dietary
fiber, 4 mg iron, 83 mg calcium
