Cranberry Chicken^ Recipe

Ingredients:
4 cup: Cranberry juice,
Eight pieces,
Unsweetened,
1/2 lbs: Cranberries,
1 1/2 tbsp: Dried basil,
2 tbsp: Rice vinegar,
1: Onion, thinly sliced
1/4 cup: Apple juice concentrate,
3 lbs: , (to 3 1/2) chicken, cut in
1 tsp: Cornstarch,
MIXED WITH
2 tbsp: Cold water,
Directions:
Simmer 3 cups of the cranberry juice with the basil and onion slices
10 minutes. Cool; pour over chicken and marinate in the refrigerator
overninght. Poach chicken in marinade until tender; keep warm. Simmer
remianing ingredients except cornstarch and water mixture about 20
minutes or until berries are tender. Stir in cornstarch mixture and
cook until thickened. Serve poured over chicken.
