Szechuan Beef With Noodles^ Recipe

Ingredients:
MARINADE
1 tbsp: Low sodium soy sauce,
3/4 tsp: Gingerroot, finely chopped
1 tbsp: Water,
5: Green onions, tops finely
2 tbsp: Rice vinegar,
Chopped,
3/4 tsp: Garlic, finely chopped
2 tbsp: Apple juice concentrate,
BEEF
1 lbs: Lean flank steak, cut in
4: Green onions, thinly sliced
Strips,
1/2: Green bell pepper,
2 tbsp: Beef stock,
Diagonally cut,
8: Dried mushrooms, soaked in
1 lbs: Angel hair, cooked to
Hot water and chopped,
Desired doneness,
Directions:
Marinate beef 1-2 hours or more in one third of the combined marinade
ingredients; drain beef, discarding marinade. Toss and cook beef
until done in a hot skillet or wok. Add remaining marinade, peppers
and onions; cook until crisp tender and serve over pasta. makes 4
servings.
Variations: Add 1 teaspoon hot Chinese mustard.
