Guacamole Con Tomatillos Recipe
Yield: 2 cupsRecipe by luhu.jp
Ingredients:
4: TO 5 fresh or canned,
IF hotter sauce is wanted,
Tomatillos,
2 large: Ripe avocados,
3: Canned green chilies, seeded
1 tbsp: Minced onion,
*OR*,
ds Salt to taste,
1: Serrano or jalapeno pepper,
ds Pepper to taste,
OPTIONAL GARNISH
1/4 cup: Cilantro leaves, minced
Directions:
If using fresh tomatillos, discard husks and wash. Boil in a small
amount of water until just tender, about 5 minutes, drain.
If using one of the hotter fresh chilies, discard stem and seeds.
Combine tomatillos and chilies in a blender and blend until smooth.
Halve the avocado and remove seed. Scoop out pulp and mash with a
fork. Stir in tomatillo mixture with onions. Add salt and pepper to
taste. Garnish with cilantro if desired.
