Habanores Mung Beans Recipe

Ingredients:
1 cup: Yellow split mung beans,
3 medium: Potatoes, peeled, quartered
2/3 cup: Finely chopped onions,
1 tsp: Salt,
1 tbsp: Grated ginger,
1 tbsp: Olive Oil,
2 tsp: Minced garlic,
1 tsp: Cumin seeds,
1/2 tsp: Turmeric,
2 tsp: Lemon juice,
4 each: Habaneros Peppers,
2 tbsp: Chopped coriander leaves,
3 cup: Vegetarian broth,
Directions:
Wash mung beans. Put in a deep pot with onions, ginger, garlic,
turmeric, Habaneross, cumin & 3 cups water. Bring to a boil &
simmer for 45 minutes.
Add potatoes, salt & another 2 cups water. Cook for 15 minutes.
Add lemon juice & coriander leaves. Mix well. Serve with plain cooked
rice.
