Heavenly Hash Sweet Potato Salad Recipe

Ingredients:
4 medium: Sweet Potatoes, cooked and
1/2 cup: Pecans, chopped
Chilled,
1/4 cup: Celery, diced
3/4 cup: Crushed Pineapple --,
2 tbsp: Fresh Orange Juice,
Drained,
1/2 cup: Mayonnaise,
3/4 cup: Marshmallows,, (Or Use
Lettuce Of Choice, as
Miniatures), cut in small
Needed,
Pieces,
Red Cherries, for garnish
Directions:
Peel chilled sweet potatoes and cut into small cubes. Add pineapple,
marshmallows, pecans, and celery. Mix orange juice with mayonnaise,
add to salad, and toss gently. Serve on bed of lettuce and top with
red cherries. Yield: 4 to 6 servings.
