Enchiladas #1 Recipe

Ingredients:
1 lbs: Ground Beef,
8 ounce: Tomato Sauce,
1 package: Enchilada Sauce Mix,
1 1/2 cup: Water,
8 ounce: Cheddar Cheese, grated
8: Flour Tortillas,
Lettuce, shredded
4 ounce: Sour Cream,

Directions:
In a 2-quart saucepan, combine enchilada sauce mix with tomato sauce
and water. Bring to a goil, reduce heat and simmer 5 minutes. Set
aside.

Brown ground beef in a large skillet. Drain fat. Add * cup of the
above sauce to meat and mix well. Add 4 ounces of cheese to meat
mixture.

Coat each tortilla with sauce. Spread * cup of sauce in the bottom
of 12 x 7* x 2" baking dish. Spoon 3 tbs. meat mixture down center
of each tortilla. Fold over tortilla sides to encase meat and place
seam-side down in baking dish.

Spoon remaining sauce over enchiladas. Top with * cup Cheddar
Cheese. Bake in preheated 350* oven for 15 minutes. Serve hot.

Top with more enchilada sauce, lettuce, and sour cream if desired.
