Main Dish Fruit Recipe

Ingredients:
1 1/2 cup: Brown rice, short grain, about 4 cups cooked rice
4 cup: Water,
1/4 tsp: Salt,
1/4 tsp: Cinnamon, ground
1/4 cup: Pine nuts, toasted
1/4 cup: Raisins,
8 ounce: Fresh apricots, cut into eighths
Directions:
Place rice, water, and salt in a large saucepan over medium-high
heat. Cover, bring to a boil, reduce heat to medium. Cook until
tender, about 30 minutes.
Transfer rice to a large bowl and sprinkle with cinnamon. Add
remaining ingredients to rice, toss, and season to taste. Serve
immediately.
Per serving: 210 cal, 4 g fat, 18% cal from fat, 6 g protein, 39 g
