Orange-currant Muffins - Bon Appetit Recipe

Ingredients:
2 cup: All purpose flour,
1/2 cup: Sugar,
2 1/2 tsp: Baking powder,
1/4 tsp: Baking soda,
Pinch of salt,
1 cup: Orange juice,
1/2 cup: , (1 stick) unsalted butter, melted, cooled
2 large: Eggs, beaten to blend
2 tbsp: Fresh lemon juice,
1/4 tsp: Lemon extract,
3/4 cup: Dried currants,
2 tsp: Grated orange peel,

Directions:
Position rack in center of oven and preheat to 400F. Line twelve
1/3-C muffin cups with paper liners. Combine first 5 ingredients in
large bowl. Whisk orange juice, melted butter, eggs, lemon juice and
lemon extract in medium bowl to blend. Add to dry ingredients and mix
just until combined. Fold in currants and orange peel. Divide batter
equally among prepared muffin cups. Bake until golden and tester
inserted into center of muffins comes out clean, about 25 minutes.
Transfer muffin tin to rack and cool.
