Papaya-watermelon Salsa - Bon Appetit Recipe

Ingredients:
1 cup: Diced peeled seeded papaya,
1/2 cup: Diced seeded watermelon,
1/4 cup: Diced English hothouse cucumber, unpeeled
1/4 cup: Minced red onion,
3 tbsp: Fresh lime juice,
2 tbsp: Chopped fresh cilantro or basil,
2 tsp: Olive oil, preferably extra-virgin
1 tsp: Minced seeded jalapeno chili,
Directions:
Combine all ingredients in medium bowl. Season with salt and pepper.
(Can be made 1 hour ahead. Cover and chill.)
NOTE: Good topper for grilled mahimahi, swordfish, tuna or salmon.
For the freshest flavor and texture, serve the salsa within 1 hour of
preparing it.
