Baby Artichokes Barigoule - House Beautiful Recipe

Ingredients:
1/2 cup: Extra-virgin olive oil,
1 cup: Basil leaves, chopped
1 medium: Onion, diced
12: Baby artichokes, trimmed
2 Cloves: garlic, crushed
3/4 cup: Dry white wine,
1 Slice: pancetta,
Coarse salt & freshly ground,
1 small: Carrot, peeled and diced
-black pepper to taste,
Directions:
In a large skillet over medium heat, heat oil and saute onion, garlic,
pancetta, carrot and basil until the onions are soft. Do not brown.
Add artichokes and cook until tender, about 5 to 10 minutes.
Place artichokes in a shallow dish and set aside.
Pour wine into skillet and deglaze pan. Sea- son sauce and pour over
the artichokes. Serves 12 as an appetizer.
