Halibut With Confetti Squash - Country Living Recipe

Ingredients:
1: 8-oz skinless halibut fillet,
-red pepper or pimiento,
1 small: , (4 to 5 oz) yellow squash,
1/4 tsp: Dried tarragon leaves,
-cut into 1/2-inch pieces,
-crushed,
1 small: , (4 to 5 oz) zucchini, cut
1/4 tsp: Ground black pepper,
-into 1/2-inch pieces,
2: Lemon or lime wedges,
3 tbsp: Coarsely chopped roasted,

Directions:
1. Cut halibut in half. In small bowl, combine remaining ingredients
except lemon wedges

2. Place one piece of halibut on the side of large microwave-safe
dinner plate. Place half of vegetable mixture next to halibut. Repeat
with remaining fish and vegetables on another plate.

3. Cover plates with plastic wrap. Microwave each plate on high (100
percent) 3 minutes and 30 seconds. Puncture plastic wrap or uncover
immediately to prevent wrap from shrinking onto food. Serve fish with
lemon or lime wedges.
