Ham Sandwich Squares Recipe

Ingredients:
1/4 cup: + 2 Tbsp lite ricotta cheese,
-deli-style ham,
2 tbsp: Nonfat mayonnaise,
2 medium: Tomatoes, thinly sliced
1 tbsp: Lemon juice,
8 each: 2/3-oz. slices Healthy,
1/2 tsp: Dry mustard,
-Choice American singles,
1/4 tsp: Garlic powder,
-cheese,
x Vegetable cooking spray,
2 each: Cucumbers, peeled and thinly
1 lbs: Loaf frozen white bread,
-sliced lengthwise,
-dough, thawed
1/2 cup: Sliced green onions,
1 tbsp: Reduced-calories margarine,
4 ounce: Alfalfa sprouts, washed and
-melted,
-drained,
6 each: 1-oz. slices Healthy Choice,

Directions:
Combine first 5 ingredidents in container of an electric blender;
process until smooth. Set aside.

Coat a 15- x 10- x 1-inch jellyroll pan with cooking spray; set
aside. Roll dough on a lightly-floured surface in a 15-x 10-inch
rectangle; transfer to pan. Pat to the edge of pan; brush entire
surface with margarine. Let rise in a warm place (85 degrees), free
from drafts, 30 minutes or until doubled in bulk. Bake at 450
degrees for 10 minutes or until golden brown. Remove from oven, and
cool 3 minutes. (Crust may be left in pan to serve or may be
carefully removed to a tray.) Spread crust with ricotta mixture.

Arrange remaining ingredients over ricotta mixture. Cut into squares.
Yield: 12 servings.
