Honey Peach Butter Recipe

Ingredients:
10 lbs: Peaches, peeled & chopped 4 1/2 c Sugar
1/2 cup: Water,
1 1/2 cup: Honey,

Directions:
In a large kettle, cook the peaches in water until soft. Press
through a sieve or food mill. Measure 12 cups pulp; return to kettle.
Add sugar and honey. Cook stirring often, until mixture thickens,
about 1 1/4 hours. Stir more frequently as it thickens to prevent
sticking. Pour hot into hot jars, leaving 1/4 in. headspace. Adjust
caps. Process for 10 min. in a boiling-water bath. Yield: 6 pints.
