Pork Stew With Chiles & Peanuts Recipe

Ingredients:
2 tbsp: Oil,
2 lbs: Potatoes, peeled & diced
1 lbs: Boneless pork top loin --,
1/2 cup: Unsalted roasted peanuts --,
-cut in 1/2" cubes,
-chopped,
Salt and pepper,
2 quart: Chicken stock or water,
1 medium: Onion, diced
1 tbsp: Sugar,
2 tbsp: Garlic, minced
Lime quarters, for
1 tbsp: Paprika,
-garnish,
1 tsp: Chili pepper, minced
Cilantro leaves, for
2 tsp: Ground cumin,
-garnish,

Directions:
In large saute pan, heat the oil over medium high heat until hot but
not smoking. Sprinkle the pork cubes with salt and pepper and brown
on all sides, which should take 5 to 7 minutes. Remove and set
aside. Drain all but 1 tbsp of fat, add the onion, and saute over
medium heat, stirring occasionally, about 5 to 7 minutes. Add the
garlic, paprika, pepper and cumin and cook, stirring for 1 additional
minute. Add all the remaining ingredients except the limes and
cilantro and bring just to a boil. Reduce the heat to a very low and
simmer, stirring occasionally, for about 45 minutes, or until the
pork is quite tender.
