Raw Fava Bean Spread Recipe

Ingredients:
1 1/2 cup: Shelled fava beans,
1/3 cup: Extra-virgin olive oil,
-, (abt 1 1/2 lb in the shell) 1 1/2 tb Lemon juice
2 tbsp: Romano cheese,
6: Mint leaves,
-freshly grated,
Pepper,
1/2 tsp: Garlic, finely chopped
Directions:
1. Slip your fingernail or the tip of a paring knife under the pale
skin of each fava bean and peel the skin away.
2. Put the peeled favas and all the remaining ingredients in a food
processor and puree until creamy. Transfer to a bowl and serve.
