Sweet Potato Hash Browns - Country Living Recipe

Ingredients:
4 medium: , (about 2 lb) sweet potatoes,
Marjoram leaves,
-peeled and coarsely chopped,
1/2 tsp: Salt,
2 tsp: Vegetable oil,
1/2 tsp: Ground black pepper,
1 small: Onion, chopped
1 tbsp: Butter,
2 tsp: Chopped fresh or 1/2 t dried,
1 tsp: Brown sugar,
Directions:
1. In 3-quart saucepan, place sweet potatoes and enough water to
cover. Heat to boiling and cook 5 minutes; drain and set aside.
2. Meanwhile, in large nonstick skillet, heat oil over medium-low
heat; add onion and saute 3 minutes. Add drained sweet potatoes, the
marjoram, salt, and pepper. Cover and cook 15 minutes, stirring
occasionally.
3. Increase heat to medium-high. Add butter and brown sugar to
sweet-potato mixture. Cook, uncovered, 5 to 10 minutes longer or
until potatoes are tender and begin to brown, turning occasionally
with spatula. Serve warm.
