Ben & Jerry - Sweet Cream Bases Recipe

Ingredients:

SWEET CREAM BASE 1
2 large: Eggs,
2 cup: Heavy OR whipping cream,
3/4 cup: Sugar,
1 cup: Milk,

SWEET CREAM BASE 2
2 cup: Heavy Or whipping cream,
2/3 cup: Half and half,
3/4 cup: Sugar,

SWEET CREAM BASE 3
2 cup: Light cream,
Cold,
1 cup: SWEETENED condensed milk,

Directions:
Base 1 has creamy texture, medium body and subtle taste. Good as a
background for fruit, cookies, and candy

Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2
minutes. Whisk in the sugar a little at a time, then whisk until
completely blended about one minute more. Pour in the cream.

Base 2 made with a minimum of ingredients and requires no cooking. It
makes a creamy ice cream with 25 percent butterfat. Does not store
well in home freezers.

Pour the cream into mixing bowl. Whisk in the sugar a little at a
time until completely blended, about one minute. Pour in the half
and half and blend completely.

Base 3 Makes a less creamy less rich ice cream.

Whisk the light cream and the SWEETENED condensed milk together in a
mixing bowl until blended.

All these bases make one quart for each recipe.
