Directions:
Cut coon inta chunks and salt ta taste. Cook ina inset pan of a
pressure cooker for bout an hour at 15 lbs pressure. Cook im
longer ifn es and old tuff coon. When es tender, arrange pieces
in a bakin dish and cover with dressin.
Dressin: Git about 8 ta 10 slicers of bread a liitle bit wet with
the juice fom thet thar coon and add two eggs, and two spoons of
sage, part of a spoon a cloves and big spoon a salt. Bake ina hot
oven until the dressing is nice and browned. This ll make that coon
nice and tender and he wont be too greasy.

1 1/2 lb Ground beef or turkey 2 tb Mustard, any style
2 Cans Chicken Gumbo soup 1/2 c Ketchup
1 sm Onion Salt/pepper to taste
1 tb Lemon juice

Brown the meat with the onions, lemon juice, salt and pepper. Pour
the liquid ingredients over the drained meat. Makes an interesting
new flavor for a quick supper. This sort of soup seems to vary in
moisture levels, so you might get juicier or dryer meat from batch to
