Ginger-roasted Apples With Vanilla Ice Cream Recipe

Ingredients:
1/2 cup: Water,
4 large: Sweet-Tart Apples, * Peel,
1 cup: Sugar,
Core, cut in 1/2" slices
2 tbsp: Fresh Ginger, grated
1 pint: Vanilla Ice Cream,

Directions:
* Use cooking apples like Macoun with their sweet-tart flavor.

1. Preheat the oven to 400 F. 2. Combine the water, sugar, and ginger
in a medium saucepan and bring to a boil over medium heat. Reduce the
heat and simmer for 5 mins. Let stand for 10 mins. Strain through a
fine-mesh sieve. 3. Lightly butter a baking sheet and place the apple
slices on it in a single layer. Drizzle the apples with 1/4 cup of
the ginger syrup. Roast the apples until tender, turning once, about
20 mins. Ladle some of the syrup onto each of 4 plates. Scoop the ice
cream into 4 neat rounds and place on the plates. Fan the apple
slices around the ice cream and serve immediately. Serves 4.
