Low-fat Hollandaise Sauce Recipe

Ingredients:
1 1/2 tbsp: Cornstarch,
2 1/2 tbsp: Lemon juice,
1/2 tsp: Dry mustard,
2 tsp: Margarine,
2/3 cup: 1% low-fat milk,
1/8 tsp: Salt,
2 tbsp: Egg substitute,
Paprika, opt
Directions:
Combine the cornstarch and mustard in a 2-cup glass measure.
Gradually add milk and egg substitute, stirring with a wire whisk
until blended. Microwave on high 1 minute; stir well. Microwave on
high for an additional 1
minutes or until thickened, stirring every
30 seconds. Add the lemon juice, margarine and salt. Sprinkle with
paprika if desired.
